MNTR

It will not let you write a number you cannot defend.

The Observant Blueprint is a free document and it always will be. MNTR is those same fourteen stages run as sessions, on your own numbers, one at a time, in the only order that works.

The whole method is already yours.El método completo ya es suyo.

Seventy-two pages. Fourteen stages, in one order. Sixty-two worksheets you print and write in, and a thirteen-sheet financial model where every figure is a live formula you can follow back to the sheet that produced it. In English and in native Spanish.

Download it, work it on paper, and never come back here. That is a complete outcome and it costs nothing. MNTR exists for the operators who would rather be asked the questions than read them.

The problemEl problema

Most plans are written backwards.

A lender asks for a number, so the number is written first and the reasoning is assembled afterwards to hold it up. It reads well. It survives nothing. The first person who asks where a figure came from finds the answer is another figure that came from nowhere. No sobrevive nada.

How it worksCómo funciona

Three things it refuses to do.Tres cosas que se niega a hacer.

01

It will not open a stage on a blankNo abre una etapa sobre un vacío

Every stage declares the values it reads. If one of them has not been written yet, the stage does not open, and it names what is missing, what it is called, and which stage writes it. You cannot price a dish before you have costed it.Cada etapa declara los valores que lee.

02

A stage writes only what it ownsUna etapa solo escribe lo suyo

A session can propose anything it likes. The server accepts only the values that stage is responsible for and refuses the rest, out loud, in front of you. Nothing quietly reaches into a part of your plan you have not got to yet.

03

The gate reads the work, not the claimLa compuerta lee el trabajo, no la declaración

Each stage has a condition that has to be true before you leave it, checked against what is actually written. Say you are finished with stage one without a sentence that names a reason a customer would choose you, and stage one stays open.

The registerEl registro

Eighty-four values, and every one of them knows what it feeds.

Each value is produced by exactly one stage and read by the stages that come after it. Change your category in stage one halfway through and everything built on it is flagged stale, by name, so you know precisely what has to be looked at again rather than wondering whether the plan still holds.

The cost layerLa capa de costos

Every number in your plan stands on the plate cost. Yours will stand on something.

In most plans the plate cost is a number somebody typed, from a pack price, with no cooked yield behind it. A brisket costed on the invoice and not on what comes off the pit is wrong by a third, so the food cost is wrong, so the price is wrong, so the break-even is wrong, and nobody catches it because every figure agrees with every other figure.

01

Something underneath itAlgo debajo

Your suppliers with their lead times and terms, your purchase list, the yields you measured, your preparations and your recipes. The plate cost is computed from them rather than typed. Every price carries how it is known: a link, a quote, a shelf price, or an estimate you signed for, and the page says which.

02

A benchmark that knows what kind of restaurant it is readingUn referente que sabe qué clase de restaurante está leyendo

A delivery kitchen with no dining room can carry a share of sales in food and labour that would close a full service restaurant. You name your operating model first, and the whole structure is read against the published median for that segment: food, labour, occupancy, everything else, and what is left, adding to a hundred. Where nobody has published a median for your segment, the column stays blank, because a borrowed benchmark is worse than an empty one.

03

Three depths, so it does not stop you at ingredient thirtyTres profundidades, para no dejarlo tirado en el ingrediente treinta

A plate cost can be stated, costed or purchased. Run the whole plan at the first depth in an evening, then deepen the five dishes that carry most of your mix. Nothing is enforced and the page always says which depth each figure is at, because a system that makes you enter two hundred ingredients before it shows you anything is a system you abandon at thirty.

The band everybody teaches is from a different decade.

Fifty-eight to sixty-two per cent prime cost, with sixty a working average. It is repeated almost everywhere and it has no study behind it. Against the most recent published operator data it is ten points light, and an operator who plans to sixty is planning to fail without knowing it.De cincuenta y ocho a sesenta y dos por ciento de costo primo, con sesenta como promedio de trabajo.

Those last two are the ones nobody quotes, and they are the only pair that answers the question an operator is actually asking. Not what is typical. What the ones who are making money look like. Eight points of sales separates them, and the method puts your own figure beside them, line by line, with the source named on the page. National Restaurant Association, Restaurant Operations Data Abstract 2025, covering 2024 and more than nine hundred operators. Who this is not forPara quién no es esto

You want the plan written for you.Usted quiere que le escriban el plan.

MNTR does not write your plan. It asks you, and it records what you answer. The words in the register are yours, which is the only reason you will be able to defend them.MNTR no escribe su plan.

You want a number that justifies a decision already made.

The sequence runs the other way, which is the point of it. If you already know the answer, the Blueprint is free and will be gentler company.

You are not willing to look up your own costs.

Nothing here invents a figure for you. A stage that needs your real rent will wait for your real rent.
